Renaming Spanish doc filenames

For simplicity, sticking to English in the filenames for now,
sorry!  (e.g., "LEEME" -> "README", and "OPCIONES" -> "OPTIONS")

We can consider a method of localizing the _filenames_ again,
if there's demand.
